I just wrote this in an email to a pal, so I figured I’d share it with the world. Not too surprising or exciting, but people seem to like it.
Heat a healthy couple of dashes of olive oil, and in it finely chop and saute up a white onion and about five cloves of garlic, as well as basil + oregano + rosemary + thyme + sage + dill + paprika + salt + pepper, then add 1 container of tomato sauce and one of double-strength tomato paste, bunch of fresh chopped tomatoes, simmer covered at least a half hour, tweak spices to taste, add a hair of sugar if the tomatoes make it a bit too sour, simmer more. The longer it simmers the better, but keep adding a smidge of water if it cooks down too far. Paprika is my secret ingredient for veggie/vegan sauce when you’re used to eating pasta with meat, it
makes it strangely hearty.
